Golden Enoki (Flammulina velutipes), also known as the Golden Needle Mushroom or Velvet Foot. This culture is a stunning gourmet edible with bright golden caps and long, elegant slender stems. This reliable strain produces abundant, photogenic clusters with beautiful golden hues on sterilised sawdust blocks and enriched substrates. It fruits prolifically indoors in cooler conditions, delivering year-round gourmet harvests of these eye-catching, restaurant-quality mushrooms. Wild strain well suited to NZ climate.

  • Scientific name: Flammulina velutipes
  • Flavour & texture: Prized for its crisp, crunchy texture and mild, sweet umami flavour with subtle nutty notes, it adds a delicate sophistication to soups, salads, stir-fries, hot pots, ramen, and fresh Asian-inspired dishes – delicious raw or lightly cooked.
  • Spawn Storage: If you cannot use your spawn right away you can store it for up to 4 months in the fridge. Spawn vitality cannot be guaranteed with fridge storage.
  • Difficulty: Easy to Medium
  • Growth speed: Medium, likes to incubate a while before fruiting sometimes.
  • Incubation time & temperature: 12-30 days @ 23-25°C
  • Fruiting temperature: 5-16°C
  • Yield: Very high with large clustered fruit bodies.
  • CO2 Tolerance: Extremely high - fruits best below 1000ppm if you want normal caps, if you want the long stems enoki is known for run high CO2 levels.
  • Ideal Fruiting Humidity: 80-90%
  • Native status: Native
  • Recommended Fruiting Substrates:  Masters Mix (50% wood pellets / 50% soy hulls) or 20% Bran + 80% Pine Fire Pellets.
  • Substrate Preparation Method: 15PSI pressure sterilised substrate in filter patch bags or heat pasteurised (90-99deg for 12+ hours) substrate in filter patch bags
  • Growing Style: Side-fruiter: Pins often form under the filter-patch plastic. Let them develop for a few days, then cut the bag around the pins so the mushrooms can push through and grow outward. This strain will often pin a lot under the plastic, just pick one or two clusters to cut the plastic near and it will redirect energy to these clusters, ignore the rest growing under the plastic.

 

Receiving Spawn:

  • Upon receiving your spawn it is ideal to take it out of the box within a day or two, stand the top of the bag up so the filter patch is exposed and the spawn can breath. Keep in a room temperature (10-25°C) place out of direct sunlight until used.
